Chicken from the Basque Country- a step by step recipe.


  1. 1 large fat chicken weighing at least 2 kg, cut into 10 parts;

  5. 2 large onions;
  6. 100 ml of extra virgin olive oil; “

  8. 5-6 cloves of garlic;

  10. 0.5 tbsp. l. ground spicy chili;
  11. salt.


Apply sweet pepper with vegetable oil for & bake in the oven at 200 ° C to black tan, turning over from time to time. Fold in a bowl, cover with foil, leave for 10 minutes, remove skin and core. Pitting the flesh into large strips.

In a large saucepan with a thick bottom, heat half of the olive oil, put the chicken pieces and fry them on all sides until golden brown. Season lightly with salt, reduce heat to low, cover and cook for 15 minutes.

In a large frying pan, heat the remaining olive oil. Put onion and cook for 20 minutes. Add tomatoes and cook it all together for another 15 minutes. Season with salt and black pepper to taste.

Arrange the onions and tomatoes in plates, put the chicken pieces with ham and pepper on top, pour over the sauce formed during the stewing. Serve with crispy white bread. &Nbsp;
